The following ingredients have 6 Servings
  • 1 cup all-purpose flour
  • 1/2 cup rye flour
  • 1/2 tsp salt
  • 1 stick (113 g) butter, cold, cubed
  • 1/4 cup ice-cold water
  • 450 g heirloom tomatoes (more or less)
  • 2 Tbsp Parmigiano, grated
  • 2 Tbsp Gruyère, grated
  • 2 Tbsp evo oil
  • salt & pepper to taste
  • basil, parsley, thyme
  • 1 small clove garlic, minced
  • 1 small egg + 1 tsp milk beaten together to brush on the border
