Ingredients

The following ingredients have 4 Servings
  • 2 eggs
  • 1/4 cup canola oil
  • 1/4 cup maple syrup
  • 1 cup crushed pineapple (drained)
  • 1/4 cup pineapple juice (from crushed pineapple)
  • 1/2 cup non-fat plain yogurt
  • 1/2 cup granulated sugar
  • 1 cup white whole wheat flour
  • 1 1/2 cups all purpose flour
  • 1 tablespoon cinnamon
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups grated zucchini
  • 1/2 cup walnuts (chopped (optional))

Instruction

  • Preheat oven to 350°F. Coat a loaf pan with non-stick cooking spray.
  • In a large bowl combine eggs, canola oil, maple syrup, pineapple, pineapple juice, yogurt and sugar. Mix well.
  • In another large bowl combine flour, cinnamon, baking soda, baking powder and salt.
  • Add flour mixture to liquid ingredients and mix until combined.
  • Fold in zucchini and walnuts just until combined.
  • Place in loaf pan and bake four about 1 hour or until toothpick comes out of loaf clean.
