Ingredients
The following ingredients have 4 Servings
- 2 eggs
- 1/4 cup canola oil
- 1/4 cup maple syrup
- 1 cup crushed pineapple (drained)
- 1/4 cup pineapple juice (from crushed pineapple)
- 1/2 cup non-fat plain yogurt
- 1/2 cup granulated sugar
- 1 cup white whole wheat flour
- 1 1/2 cups all purpose flour
- 1 tablespoon cinnamon
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups grated zucchini
- 1/2 cup walnuts (chopped (optional))
Instruction
- Preheat oven to 350°F. Coat a loaf pan with non-stick cooking spray.
- In a large bowl combine eggs, canola oil, maple syrup, pineapple, pineapple juice, yogurt and sugar. Mix well.
- In another large bowl combine flour, cinnamon, baking soda, baking powder and salt.
- Add flour mixture to liquid ingredients and mix until combined.
- Fold in zucchini and walnuts just until combined.
- Place in loaf pan and bake four about 1 hour or until toothpick comes out of loaf clean.
