Ingredients
The following ingredients have 4 Servings
- 2 Tbsp olive oil
- 1 medium yellow onion (chopped)
- 2 medium carrots (chopped)
- 3 stalks celery (chopped)
- 4 cloves garlic (minced)
- 12 cups vegetable broth
- 1 tsp fresh thyme
- 1/2 tsp dried oregano
- 2 whole bay leaves
- 1 cup dried quinoa
- 2 15-ounce cans chickpeas (drained)
- 1/2 cup chopped parsley
Instruction
- Heat oil over medium heat in a large pot. Add onion, carrots, celery, and garlic, and cook until softened (about 10 minutes.
- Add broth, thyme, oregano, and bay leaves, then bring to a boil. Once boiling, add quinoa and cook until done (about 12 minutes).
- Right before serving, stir in chickpeas and garnish with parsley.
