Ingredients
The following ingredients have 4 Servings
- 3 egg whites (room temperature)
- 3 eggs (room temperature)
- 1/2 cup unsweetened almond milk (or milk of choice)
- 1/4 cup maple syrup
- 1 tsp almond or vanilla extract
- 3/4 cup coconut flour
- 1 1/2 tsp turmeric
- 1/2 tsp ground ginger
- 1/2 tsp baking soda
- 1/4 tsp salt
Instruction
- Preheat oven to 350 F. Prepare a muffin tin by spraying with cooking spray or lining with muffin liners.
- In a large mixing bowl, whisk together the eggs, milk, maple syrup, extract and salt until bubbly.
- In a separate bowl, mix together the coconut flour, turmeric, ginger and baking soda.
- Fold half the dry ingredients into the wet ingredients to combine then fold the remaining half and combine. Transfer the batter to the muffin tin by dividing it evenly into 8 cavities.
- Bake at 350 F for 25 minutes or until golden brown and a toothpick can be removed clean. Remove from the oven and transfer to a wire baking rack to cool a few minutes before serving.
