Ingredients

The following ingredients have 8 Servings
  • 1 cup nonfat Greek yogurt (I use Fage)
  • Homemade Taco Seasoning
  • 2 roma tomatoes (diced with seeds and ribs removed)
  • 1/2 cup black olives (sliced)
  • 2 cups iceberg lettuce (shredded)
  • 1/2 cup light Mexican 3 cheese blend
  • optional: sliced green onions for garnish

Instruction

  • In a small bowl, combine the Greek yogurt with the homemade taco seasoning mixture. Stir until combined well.
  • With a spatula, spread the Greek yogurt mixture onto the bottom of a round 9-inch glass dish into an even layer.
  • Top with shredded iceberg lettuce, tomatoes, cheese and black olives. Garnish with green onions as desired.
