Ingredients

The following ingredients have 4 Servings
  • 1 pound lean ground turkey
  • 1 onion (diced)
  • 4 cloves garlic (minced)
  • 2 carrots (chopped)
  • 1 red pepper (diced)
  • 1 medium zucchini (diced)
  • 1 15- ounce can black beans (drained and rinsed)
  • 1 1/2 cups tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons molasses
  • 1 tablespoon red wine vinegar
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon mustard powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 - 8 leaves large lettuce

Instruction

  • Brown the ground turkey and the onion in a large skillet over medium-high heat for about 5 minutes or until cooked.
  • Add the garlic, red pepper, carrots and zucchini and cook 5 minutes more, stirring occasionally.
  • Stir in the rest of the ingredients, reduce heat to low, simmer for 10 minutes more.
  • Place a half-cup scoop of the mixture onto the center of each lettuce leaf, roll and serve.
