Ingredients
The following ingredients have 4 Servings
- 1 pound lean ground turkey
- 1 onion (diced)
- 4 cloves garlic (minced)
- 2 carrots (chopped)
- 1 red pepper (diced)
- 1 medium zucchini (diced)
- 1 15- ounce can black beans (drained and rinsed)
- 1 1/2 cups tomato sauce
- 2 tablespoons tomato paste
- 2 tablespoons molasses
- 1 tablespoon red wine vinegar
- 1 tablespoon worcestershire sauce
- 1 teaspoon mustard powder
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 6 - 8 leaves large lettuce
Instruction
- Brown the ground turkey and the onion in a large skillet over medium-high heat for about 5 minutes or until cooked.
- Add the garlic, red pepper, carrots and zucchini and cook 5 minutes more, stirring occasionally.
- Stir in the rest of the ingredients, reduce heat to low, simmer for 10 minutes more.
- Place a half-cup scoop of the mixture onto the center of each lettuce leaf, roll and serve.
