Ingredients

The following ingredients have 1 Servings
  • 1 cup unsweetened coconut milk (from carton, or your favorite non-dairy milk)
  • 3/4 cup chopped baby carrots
  • 5 clementine mandarin oranges (peeled and separated)
  • 1/2 cup unsweetened coconut milk yogurt (I used So Delicious)
  • Optional: lemon juice and Stevia drops

Instruction

  • Using a small blender or NutriBullet, blend together the carrots and coconut milk until smooth.
  • Add in the oranges, and coconut yogurt and blend again until smooth and combined.
  • Stir in a little lemon juice (if you need more tartness) or some Stevia drops (if you need more sweetness)
  • Enjoy!
