Ingredients

The following ingredients have 4 Servings
  • 3/4 cup coconut sugar (or unrefined cane sugar)
  • 1/3 cup melted coconut oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup whole grain spelt flour (or whole wheat flour)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup Coach's Oats (or 3/4 cup old fashioned rolled oats)
  • 1/2 cup raisins

Instruction

  • Preheat your oven to 350 F. Line a cookie sheet with parchment paper.
  • Beat coconut sugar and coconut oil until combined and lighter in color. Mix in egg and vanilla.
  • In a separate bowl whisk together spelt flour, baking powder, cinnamon and salt. Add this dry ingredient mix to the wet mixture and stir to combine. Fold in the oats and raisins.
  • Form cookies using a cookie scoop and drop them on the prepared sheet. Bake for 10-12 minutes or until the edges are just set. Let the cookies cool on the baking sheet for about 10 minutes, then move them to wire rack to cool fully. Store airtight.
