Ingredients
The following ingredients have 24 Servings
- 256g (1 cup) Homemade Nutella
- ⅔ cup Unsweetened Vanilla Almond Milk
- 1 tbs Vanilla Extract
- 2½ tsp Liquid Stevia Extract
- ¼ tsp Salt
- 153g (1½ cups) Quinoa Flakes
- 90g (¾ cup) Quick Cooking Oats
- 21g (3 tbs) Coconut Flour
- 10g (2 tbs) Unsweetened Dark Cocoa Powder
Instruction
- In a stand mixer bowl fitted with a beater attachment, add the Nutella, almond milk, vanilla extract, stevia extract and salt. Mix on low speed.
- While mixing, add the quinoa flakes, then oats, then coconut flour, then cocoa powder.
- Scrape down the sides of the bowl and mix again (if you want some crunch in there, feel free to add 1/2 cup Chopped Hazelnuts or Mini Semi-Sweet Chocolate Chips). Cover the bowl with plastic wrap and refrigerate for 30 minutes.
- Line a cookie sheet with parchment paper. Use a cookie scoop to portion out the dough and place on the prepared cookie sheet. Roll the dough into balls. Serve immediately or cover and refrigerate for later!
