Ingredients
The following ingredients have 4 Servings
- 90g (⅓ cup) Mashed Banana
- ¼ cup Unsweetened Vanilla Almond Milk
- ½ tsp Vanilla Extract
- 26g (¼ cup) Quinoa Flakes
- ½ tbs Ground Flaxseed
- ½ tsp Ground Cinnamon
- ¼ tsp Double Acting Baking Powder
- 2 packets Natural Sweetener
- tiny pinch of Salt
Instruction
- In a bowl, stir together the mashed banana, milk and vanilla.
- In another bowl, whisk together the quinoa flakes, flaxseed meal, cinnamon, baking powder, sweetener and salt. Dump the dry ingredients into the wet ingredients and stir together until fully incorporated.
- Spray a mug with cooking spray and scoop in the batter. Microwave for 3 minutes and 30 seconds, or until the surface of the muffins spring back when tapped. Let cool slightly, then enjoy!
