Ingredients
The following ingredients have 8 Servings
- 1 cup (90g) rolled oats
- 1 cup (60g) unsweetened shredded coconut
- 1 Tablespoon chia seeds
- 1 pinch sea salt
- 3 Tablespoons (45 ml) agave or maple syrup
- 1/2 lemon, juiced
- 1 Tablespoon lemon zest
- 1 Tablespoon coconut oil, melted
- 1/2 teaspoon vanilla extract (optional)
- Extra coconut and lemon zests for rolling in
Instruction
- In a food processor, blend all the dry ingredients (oats, shredded coconut, chia, salt) until well combined and oats are chopped up.
- Add in the wet ingredients and pulse until it forms into a sticky dough.
- Transfer the mixture to a bowl and refrigerate for 20 minutes.
- Remove from the refrigerator and roll into 8 balls with your hands.
- Roll in extra lemon zests and shredded coconut.
- Store in a airtight container in the refrigerator for up to one week.
