Ingredients

The following ingredients have 8 Servings
  • 1 cup (90g) rolled oats
  • 1 cup (60g) unsweetened shredded coconut
  • 1 Tablespoon chia seeds
  • 1 pinch sea salt
  • 3 Tablespoons (45 ml) agave or maple syrup
  • 1/2 lemon, juiced
  • 1 Tablespoon lemon zest
  • 1 Tablespoon coconut oil, melted
  • 1/2 teaspoon vanilla extract (optional)
  • Extra coconut and lemon zests for rolling in

Instruction

  • In a food processor, blend all the dry ingredients (oats, shredded coconut, chia, salt) until well combined and oats are chopped up.
  • Add in the wet ingredients and pulse until it forms into a sticky dough.
  • Transfer the mixture to a bowl and refrigerate for 20 minutes.
  • Remove from the refrigerator and roll into 8 balls with your hands.
  • Roll in extra lemon zests and shredded coconut.
  • Store in a airtight container in the refrigerator for up to one week.
