The following ingredients have 5 Servings
- 2 teaspoons olive oil ((or water if cooking oil-free()
- 1 small yellow onion (diced)
- 1 large stalk celery (diced)
- 4 garlic cloves (minced)
- 1 tablespoons minced fresh ginger
- 1 1/2 teaspoon curry powder
- 1 teaspoon dried thyme
- 3/4 teaspoon ground coriander
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground pepper
- 1/8 teaspoon cayenne pepper ((omit for less spice))
- 2 pounds cauliflower head (cur into large florets (about 6 cups))
- 4 cups vegetable broth ((See Note 1))
- 1 cup water
- 1 (14 oz.) can chickpeas (drained & rinsed)
- 3 tablespoons nutritional yeast
- 3 tablespoons raw pepitas (toasted in a dry skillet (optional) (See Note 2))
