The following ingredients have 5 Servings
  • 2 teaspoons olive oil ((or water if cooking oil-free()
  • 1 small yellow onion (diced)
  • 1 large stalk celery (diced)
  • 4 garlic cloves (minced)
  • 1 tablespoons minced fresh ginger
  • 1 1/2 teaspoon curry powder
  • 1 teaspoon dried thyme
  • 3/4 teaspoon ground coriander
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground pepper
  • 1/8 teaspoon cayenne pepper ((omit for less spice))
  • 2 pounds cauliflower head (cur into large florets (about 6 cups))
  • 4 cups vegetable broth ((See Note 1))
  • 1 cup water
  • 1 (14 oz.) can chickpeas (drained & rinsed)
  • 3 tablespoons nutritional yeast
  • 3 tablespoons raw pepitas (toasted in a dry skillet (optional) (See Note 2))
