Ingredients
The following ingredients have 4 Servings
- 1 cup rolled oats
- 1 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/4 teaspoon ginger
- 1/4 teaspoon salt
- 3 eggs
- 1/3 cup liquid honey (or substitute maple syrup if desired)
- 1/4 cup vegetable oil (or substitute melted coconut oil if desired)
- 1 cup shredded carrots
- 3/4 cup chopped nuts or dried fruit (OPTIONAL (we like to add chopped walnuts or dried cranberries))
Instruction
- Preheat your oven to 350 degrees Fahrenheit and prepare a large baking sheet by lining it with parchment paper.
- Mix the dry ingredients together in a bowl with a fork or a whisk.
- Add the eggs, oil and honey to a liquid measuring cup and whisk with a fork to combine.
- Pour the liquid ingredients into the dry ingredients and add the shredded carrots and any chopped nuts or dried fruit.
- Combine everything together and drop by the tablespoon onto a parchment-lined baking sheet. Bake for 16-18 minutes at 350 degrees Fahrenheit.
- Let cool, and then enjoy!
