Ingredients
The following ingredients have 6 Servings
- 2 tablespoons coconut oil (melted and cooled slightly)
- 1/3 cup honey
- 1 large egg (room temperature)
- 1 tablespoon freshly squeezed orange juice
- 1 teaspoon vanilla extract
- 1/2 cup whole wheat pastry flour
- 2 teaspoons cornstarch
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 tablespoon orange zest
- 1 teaspoon baking soda
- 1 1/2 cups old fashioned oats
- 1/4 cup craisins
- 1/4 cup unsalted peanuts (feel free to sub with a different nut)
- 1/4 cup Unsweetened flaked coconut
Instruction
- Preheat oven to 350 degrees F and line a baking sheet with a silicone mat.
- Whisk together coconut oil, honey, egg, orange juice and vanilla until well combined. Set aside.
- Stir together whole wheat pastry flour, cornstarch, salt, cinnamon, orange zest, baking soda, and old fashioned oats until well combined.
- Stir the wet and dry ingredients together.
- Stir in craisins, peanuts, and flaked coconut until well combined.
- Using a cookie scoop, scoop cookies onto prepared baking sheet - you should end up with 12 cookies.
- Bake in preheated oven for 8-10 minutes.
- Remove from oven and let cool on baking sheet for 3 minutes.
- After 3 minutes, transfer to wire cooling rack to finish cooling
