Ingredients

The following ingredients have 6 Servings
  • 2 tablespoons coconut oil (melted and cooled slightly)
  • 1/3 cup honey
  • 1 large egg (room temperature)
  • 1 tablespoon freshly squeezed orange juice
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat pastry flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 tablespoon orange zest
  • 1 teaspoon baking soda
  • 1 1/2 cups old fashioned oats
  • 1/4 cup craisins
  • 1/4 cup unsalted peanuts (feel free to sub with a different nut)
  • 1/4 cup Unsweetened flaked coconut

Instruction

  • Preheat oven to 350 degrees F and line a baking sheet with a silicone mat.
  • Whisk together coconut oil, honey, egg, orange juice and vanilla until well combined. Set aside.
  • Stir together whole wheat pastry flour, cornstarch, salt, cinnamon, orange zest, baking soda, and old fashioned oats until well combined.
  • Stir the wet and dry ingredients together.
  • Stir in craisins, peanuts, and flaked coconut until well combined.
  • Using a cookie scoop, scoop cookies onto prepared baking sheet - you should end up with 12 cookies.
  • Bake in preheated oven for 8-10 minutes.
  • Remove from oven and let cool on baking sheet for 3 minutes.
  • After 3 minutes, transfer to wire cooling rack to finish cooling
