Ingredients

The following ingredients have 4 Servings
  • 1 pound lean ground beef
  • 1 tablespoon taco seasoning, no sodium
  • 1 (15 ounce) can low-sodium black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 tomato, sliced
  • 1 bell pepper (yellow, red or green), sliced
  • 2 cups romaine lettuce, shredded
  • 1 avocado, peeled and chopped
  • 1 avocado
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • salt and black pepper to taste
  • Optional toppings: light sour cream, fresh cilantro

Instruction

  • Add ground beef and taco seasoning to medium skillet. Cook over medium heat until thoroughly cooked.
  • Combine remaining ingredients in a large bowl.
  • To make dressing: combine all ingredients and blend with an immersion blender.
