Ingredients
The following ingredients have 4 Servings
- 1.5 lbs chicken tenders
- 1/2 cup grated parmesan cheese
- 1/2 cup blanched almond flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp Italian seasoning
- sea salt and pepper, to taste, about 1/4 teaspoon each
- 1/3 cup shredded mozzarella cheese
- 1 cup pure tomato sauce, or marinara sauce
- a large handful of fresh basil, chopped
- avocado oil cooking spray
Instruction
- Preheat your oven to 400 degrees f. and line a baking sheet with parchment paper.
- Pound each chicken tender to an even 1/4-inch thickness. Season with sea salt and pepper, then lightly spritz with cooking oil on both sides.
- In a shallow dish, combine your grated parmesan, almond flour, garlic powder, onion powder, Italian seasoning, sea salt and pepper. Whisk with a fork until well combined.
- Dredge each piece of chicken into the parmesan flour mixture, gently pressing to coat on all sides. Place them onto your prepared baking sheet.
- Bake in your preheated oven until chicken is cooked through and golden, about 15 minutes.
- Remove from the oven, and spoon about a Tablespoon of sauce over each piece of chicken, then sprinkle evenly with mozzarella.
- Return to the oven and bake until the cheese is melted, about 3-5 minutes.
- Garnish with fresh basil and enjoy!
