Ingredients

The following ingredients have 8 Servings
  • 1/2 Cup Coconut Flour
  • 2 tsp Cinnamon
  • 1/4 tsp Mixed Spice
  • Pinch Cloves
  • 1/4 tsp Salt
  • 3 Large Eggs
  • 1/4 Cup Unsweetened Apple Sauce
  • 1/4 Cup Coconut Oil, (Melted)
  • 2 Tbsp. Honey
  • 2 Tbsp. Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 Apple (Finely chopped)

Instruction

  • Preheat the oven to 180°C (350°F) and line a muffin tray with 8-10 muffin liners.
  • Place all the dry ingredients into a large bowl and mix together.
  • Melt the coconut oil and place in a bowl with all the wet ingredients and mix thoroughly together.
  • Mix the wet ingredients into the dry and mix well.
  • Stir in 2/3 of the chopped apple.
  • Pour into the muffin cases until each one is 2/3 full.
  • Sprinkle the remaining apple over the top of each one.
  • Bake for 20 minutes or until a skewer inserted comes out clean.
  • Allow to cool for 10 minutes before serving
