Ingredients
The following ingredients have 18 Servings
- 1 1/2 lbs ground beef
- 8 baby carrots
- 1/2 a head cauliflower
- 3 celery sticks
- 1 egg
- 1 tsp salt
- 1 cup French fried onions
- 1 cup cheese crackers
- 1/4 cup Worcestershire sauce
- 1/4 cup minced garlic
- 1 tsp hot sauce
- 6 ounces Arla Dofino Havarti cheese
- 1 cup ketchup
- 1/2 cup brown sugar
- 1 tsp Harissa
- 1/2 tsp horseradish
- 1 Tbs Worcestershire sauce
Instruction
- Preheat oven to 450 degrees
- Line a muffin tin with foil cupcake wrappers, or spray tin with non-stick cooking spray
- Put vegetables (carrots, celery, cauliflower) in a food processor and pulse until minced well.
- Put vegetables in a bowl with the ground beef and minced garlic
- Put french fried onions and cheese crackers in a food processor, and pulse
- Put the cracker mixture into the bowl with the veggies and ground beef. Add in Worcestershire sauce, egg, and salt and hot sauce.
- Mix well.
- Cut Arla Dofino cheese into chunks
- Using a 1/3 cup measurer, measure out 1/3 cup, and then form the meat around the cheese.
- Put in foil liner. You should get between 15-18 mini meatloaf
- Bake at 450 for 20-24 minutes or until internal temperature reaches 160 degrees F.
- While meatloaf is baking, mix together sauce ingredients and heat in a small sauce pan. Bring to a boil, then remove from heat, stir and set aside.
- When meatloaf minis are cooked through, remove from oven, and top with sauce.
- Serve!
