Ingredients

The following ingredients have 18 Servings
  • 1 1/2 lbs ground beef
  • 8 baby carrots
  • 1/2 a head cauliflower
  • 3 celery sticks
  • 1 egg
  • 1 tsp salt
  • 1 cup French fried onions
  • 1 cup cheese crackers
  • 1/4 cup Worcestershire sauce
  • 1/4 cup minced garlic
  • 1 tsp hot sauce
  • 6 ounces Arla Dofino Havarti cheese
  • 1 cup ketchup
  • 1/2 cup brown sugar
  • 1 tsp Harissa
  • 1/2 tsp horseradish
  • 1 Tbs Worcestershire sauce

Instruction

  • Preheat oven to 450 degrees
  • Line a muffin tin with foil cupcake wrappers, or spray tin with non-stick cooking spray
  • Put vegetables (carrots, celery, cauliflower) in a food processor and pulse until minced well.
  • Put vegetables in a bowl with the ground beef and minced garlic
  • Put french fried onions and cheese crackers in a food processor, and pulse
  • Put the cracker mixture into the bowl with the veggies and ground beef. Add in Worcestershire sauce, egg, and salt and hot sauce.
  • Mix well.
  • Cut Arla Dofino cheese into chunks
  • Using a 1/3 cup measurer, measure out 1/3 cup, and then form the meat around the cheese.
  • Put in foil liner. You should get between 15-18 mini meatloaf
  • Bake at 450 for 20-24 minutes or until internal temperature reaches 160 degrees F.
  • While meatloaf is baking, mix together sauce ingredients and heat in a small sauce pan. Bring to a boil, then remove from heat, stir and set aside.
  • When meatloaf minis are cooked through, remove from oven, and top with sauce.
  • Serve!
