The following ingredients have 24 Servings
  • COOKIES
  • 3 cup(s) all purpose flour
  • 1/2 teaspoon(s) baking soda
  • 1 teaspoon(s) baking powder
  • 1 cup(s) butter, unsalted, softened
  • 1 cup(s) white or palm sugar, your choice
  • 2 large juiced lemons, use pulp and grated peel
  • GLAZE
  • 1 1/4 cup(s) confectioners sugar
  • 1 large juiced lemon, with pulp and grated peel

Instruction

  • Sift flour, baking powder and baking soda into bowl. Beat butter, sugar, lemon juice, lemon, pulp, and grated lemon peel, add dry ingredients And mix until combined.
  • Roll into 2 10 inch logs and wrap in plastic wrap, freeze for at least 1 hour. (You can make ahead and freeze for weeks until needed).
  • Preheat oven to 400 degrees. Remove dough from freezer, unwrap and cut into 1/4 inch thicknesses
  • Place on silicone baking mat and place in oven for 7-9 min
  • Remove and let cool on rack.
  • Mix powdered sugar, lemon juice, pulp and grated peel, pour into shallow bowl or plate.
