Ingredients
The following ingredients have 6 Servings
- 1 Tbsp. olive oil
- 1 cup chopped yellow onion
- 1 cup sliced mushrooms
- 2 cups chopped fresh spinach
- 1 cup diced cooked ham
- 5 large eggs (whisked)
- 8 ounces Gouda cheese (shredded)
- 1 tsp. ground black pepper
- Cooking spray
Instruction
- Pre-heat oven to 350F degrees.
- Add oil to skillet over medium-high heat and sautee mushrooms and onions until softened, about 4 to 5 minutes. Stir in spinach, cook for 30 seconds longer until wilted. Remove from heat and let cook 5 minutes.
- In a large bowl, whisk eggs, salt and pepper.
- Mix sauteed vegetables (that have cooled), chopped ham, and 3/4 cup of cheese into whisked eggs.
- Pour mixture into 9-inch pie dish that has been lightly coated with cooking spray. Sprinkle remaining 1/4 cup cheese on top.
