Ingredients

The following ingredients have 6 Servings
  • 1 Tbsp. olive oil
  • 1 cup chopped yellow onion
  • 1 cup sliced mushrooms
  • 2 cups chopped fresh spinach
  • 1 cup diced cooked ham
  • 5 large eggs (whisked)
  • 8 ounces Gouda cheese (shredded)
  • 1 tsp. ground black pepper
  • Cooking spray

Instruction

  • Pre-heat oven to 350F degrees.
  • Add oil to skillet over medium-high heat and sautee mushrooms and onions until softened, about 4 to 5 minutes. Stir in spinach, cook for 30 seconds longer until wilted. Remove from heat and let cook 5 minutes.
  • In a large bowl, whisk eggs, salt and pepper.
  • Mix sauteed vegetables (that have cooled), chopped ham, and 3/4 cup of cheese into whisked eggs.
  • Pour mixture into 9-inch pie dish that has been lightly coated with cooking spray. Sprinkle remaining 1/4 cup cheese on top.
