Ingredients
The following ingredients have 8 Servings
- 1 tablespoon butter
- 1 large onion (diced)
- 1 meaty ham bone
- 1 pound Yukon gold potatoes (diced, peelig optional)
- 3 medium carrots (sliced)
- 2 ribs celery (sliced)
- 1 cup frozen corn (thawed)
- 15 ounces cannellini beans (drained and rinsed (white kidney beans))
- 7 cups chicken broth (or water)
- 2 bay leaves
- 2 sprigs thyme (or 1 teaspoon dried thyme leaves)
- ¼ cup fresh parsley
Instruction
- Cook the onion in butter in a small skillet over medium heat until slightly softened.
- Combine all ingredients in the slow cooker.
- Cover and cook on high for 6 hours or on low for 9-10 hours.
- Remove ham bone, bay leaves and thyme stems (if using fresh thyme).
- Chop meat from the bone and add back into the soup. Stir and serve.
