Ingredients

The following ingredients have 4 Servings
  • 1/2 cup blackberries (slightly mashed)
  • 1/2 cup ricotta cheese
  • 4 basil leaves (cut into thin ribbons)
  • 8 slices multigrain or whole wheat bread
  • 4 Tablespoons unsalted butter (softened)
  • 8 oz. fresh mozzarella (thinly sliced)
  • 1/2 pound ham (thinly sliced)
  • 1-2 tablespoons olive oil (for the pan)

Instruction

  • In a bowl, mash together the blackberries, ricotta and basil with a fork.
  • Spread the outside of each slice of bread with about half a tablespoon of the softened butter.
  • Place about 1 oz. of mozzarella on a slice of bread, top with about a quarter of the ricotta mixture, two slices of ham, and another 1 oz. of mozzarella cheese. Top with another slice of buttered bread.
  • Heat the olive oil in a pan over medium-low heat.
  • Cook the sandwiches for about 3-4 minutes per side, or until golden brown and the cheese has melted. Covering the pan with a lid during cooking will help melt the cheese.
