Ingredients

The following ingredients have 4 Servings
  • 2 pounds red potatoes (diced)
  • 1 small/medium sweet yellow onion (small chopped)
  • 4 cloves garlic (minced)
  • 1 pound cooked ham (small chopped (I used Hormel Cure 81 Ham))
  • olive oil
  • salt and pepper
  • 6 eggs

Instruction

  • Place potatoes, onion, garlic and ham in an oven-safe/broiler-safe covered dish.
  • Drizzle lightly with olive oil and sprinkle with salt and pepper.  Toss to coat evenly.
  • Cover and bake on the middle rack at 425 degrees for 30 minutes.  Uncover and turn on broiler for 3-5 minutes, until potatoes are browning.
  • Crack eggs over potatoes and return to broiler for an additional 2-3 minutes, until eggs are cooked to your liking.
  • Serve and enjoy!
