Ingredients
The following ingredients have 4 Servings
- 2 pounds red potatoes (diced)
- 1 small/medium sweet yellow onion (small chopped)
- 4 cloves garlic (minced)
- 1 pound cooked ham (small chopped (I used Hormel Cure 81 Ham))
- olive oil
- salt and pepper
- 6 eggs
Instruction
- Place potatoes, onion, garlic and ham in an oven-safe/broiler-safe covered dish.
- Drizzle lightly with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
- Cover and bake on the middle rack at 425 degrees for 30 minutes. Uncover and turn on broiler for 3-5 minutes, until potatoes are browning.
- Crack eggs over potatoes and return to broiler for an additional 2-3 minutes, until eggs are cooked to your liking.
- Serve and enjoy!
