Ingredients
The following ingredients have 12 Servings
- 1 cup grated sweet potato ((about 1 sweet potato))
- 1/4 cup grated cheddar cheese
- 3 Tbsp diced ham
- 4 Eggland's Best large eggs
- 1 tsp chopped parsley
Instruction
- Pre-heat oven to 400 degrees and lightly grease a 12-cavity mini muffin tin.
- Place grated sweet potato and grated cheese in a bowl and mix together. Spoon mixture into the bottom of muffin tin cavities and lightly press down with your fingers.
- Bake at 400 degrees for 7 minutes. Remove from oven and lower heat to 350 degrees.
- Place a few pieces of diced ham over the sweet potato/cheese.
- Crack eggs in a small bowl and whisk together with chopped parsley (if you're making these for yourself, add in salt and pepper here, too).
- Pour egg mixture evenly into each muffin tin.
- Bake at 350 degrees for 8-10 minutes, until eggs are set.
- Let cool slightly in pan before removing to cool completely. Serve immediately or keep in fridge.
