Ingredients

The following ingredients have 20 Servings
  • 2.333 cups ground Beef
  • 2 Tbsps fresh Parmesan (grated)
  • 2 Tbsps parsley (chopped)
  • 1 onion (finely chopped)
  • 1 egg
  • salt (to taste)
  • 0.5 tsp Black pepper
  • 3 Tbsps breadcrumbs
  • 1 bunch fresh Chives (to tie around rice papper)
  • 2 Cucumber (peeled)
  • 20 Rice paper (wontons)

Instruction

  • In a large bowl combine beef, Parmesan cheese, parsley, onion, egg, salt and pepper. Blend bread crumbs into the meat mixture. Shape into 20 meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. Cook thoroughly, remove from heat and drain on a paper towel.
  • Slice cucumbers in twenty 1 inch round pieces - to use for base.
  • Prepare rice paper per package instructions. Place cooked meatball in the center of the rice paper. Tie with chive stem.
  • Arrange round cucumber pieces on a platter. Insert a wooden or plastic toothpick in the center of the cucumber slice. Place rice paper covered meatball on the other end of the toothpick. Ghosts should look like they are floating - cucumber should not be visible. Serve.
