Ingredients
The following ingredients have 4 Servings
- 0.5 cup whole Hazelnuts
- 1 small Lettuce
- 1 bunch Beet Greens (young)
- 4 Sorrel leaf
- 1 Cress
- 1 tomato (in oil)
- 1 Orange (cut into segments)
- 0.5 lemon (juice)
- 3 Tbsps Orange juice
- 1 Tbsp Mustard (mild)
- 0.25 cup olive oil
- 12 slices Halloumi cheese (about 400 g)
Instruction
- Wash and sort the lettuce, beetroot leaves and sorrel leaves and shake dry. Tear into bite-size pieces. Rinse the cress under cold water and trim using a sharp knife or scissors.
- Toast the hazelnuts in a dry skillet and then skin by rubbing the hazelnuts in a towel. Place all salad ingredients in a bowl and add the orange segments. Drain the tomatoes and cut into strips. Add to the salad.
- Mix together all ingredients for the dressing. Season to taste with salt and pepper. Cut the cheese into slices and fry in a little oil until golden brown. Toss the salad in the dressing, arrange onto plates and scatter a few hazelnuts over the top. Serve together with a few slices of Haloumi cheese.
