  • 250 g (1 1/3) cup couscous
  • 330 ml (1 2/5 cup) chicken or vegetable stock, simmering
  • 1/2 tsp salt
  • 4 peaches
  • 16 green beans
  • 12 cherry tomatoes
  • 225 g (8 oz) halloumi
  • small handful parsley
  • 1 Tbsp EV olive oil
  • freshly ground black pepper
  • 5 Tbsp EV olive oil
  • zest and juice of 1 lemon
  • 2 Tbsp harissa (more or less, to taste)
  • generous pinch of salt
  • a small handful of pine nuts
