- 250 g (1 1/3) cup couscous
- 330 ml (1 2/5 cup) chicken or vegetable stock, simmering
- 1/2 tsp salt
- 4 peaches
- 16 green beans
- 12 cherry tomatoes
- 225 g (8 oz) halloumi
- small handful parsley
- 1 Tbsp EV olive oil
- freshly ground black pepper
- 5 Tbsp EV olive oil
- zest and juice of 1 lemon
- 2 Tbsp harissa (more or less, to taste)
- generous pinch of salt
- a small handful of pine nuts
