Ingredients
The following ingredients have 4 Servings
- 6-8 ounces Halloumi cheese
- 1 tbsp olive oil
- 4 cups shitshito peppers
- 2 cups tomatoes
- 4 cups arugula
- 1 cup mint leaves
- 1 cup black olives
- 1/2 cup green olives
- 1/2 cup chopped chives
- 1 garlic cloves minced
- 1 teaspoon dijon mustard
- 2 teaspoons honey
- 2 teaspoons lemon juice
- 1/4 cup olive oil
- salt and pepper
- 1 teaspoon fresh thyme (optional)
- Chilli flakes (optional)
Instruction
- Slice the cheese and soak in water if you decide to do so (more on the notes below). Slice the cheese into half an inch thick slices.
- Preheat a non stick grill pan and add to it the olive oil over medium heat.
- Grill the cheese for1-2 minutes per side. Remove the cheese and add the peppers, and increase the heat to high. Allow the peppers to charr for 3 minutes per side.
- When the peppers have cooled slightly, chop them and the cheese into an inch size pieces.
- Toss them with the remaining salad ingredients.
- Make the dressing by mixing everything together in a small bowl and dress it over the salad! Serve and Enjoy!
