Ingredients
The following ingredients have 4 Servings
- 1 lb raw chicken breasts or tenders
- 1 15 oz can great northern beans, drained and rinsed
- 1 4 oz can chopped green chiles
- 1 shallot or 1/2 onion, chopped
- 2 cloves garlic, minced
- 1-1/2 teaspoons cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon dried oregano
- 1-2 scoops Vital Proteins Beef Gelatin (optional)
- 2 cups chicken broth
- juice of 1/2 small lime
- 1/4 cup milk unsweetened almond or cow's milk
- 1 tablespoon white flour (use gluten-free as needed)
- Optional toppings: sliced avocado, lime wedges, tortilla chips, shredded cheese, chopped cilantro
Instruction
- Combine all ingredients except flour and milk into a 6-quart slow cooker; stir to combine. Cover and cook on low for 4 hours.
- Remove chicken; shred and place in the refrigerator.
- Whisk together flour and milk in a small bowl; pour into chili and stir to combine.
- Cover; cook on high for 30 minutes, stir shredded chicken back into chili, and serve with toppings. Taste before adding any more salt & pepper.
