Ingredients
The following ingredients have 9 Servings
- Cheese Sauce
- 2 tbl butter
- 2 tbl flour
- 1 1/2 cups whole milk
- 2/3 cup Guinness Draught
- 1/2 cup heavy cream
- 14 oz sharp Irish Cheddar Cheese (, shredded and divided (I use Kerrygold))
- 1/2 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 8 oz macaroni pasta ((I used corkscrews))
- Breadcrumb topping
- 1 cup Panko breadcrumbs
- 2 tbl butter
- Parsley if you want to make it fancy :)
Instruction
- Preheat your oven to 350 degrees and bring a large pot of salted water to boil.
- Once boiling, add in the pasta and cook for 3 minutes. Drain and set the pasta aside.
- In a large saucepan over medium high heat, add in 2 tablespoons of butter and once melted, add in flour, whisking constantly, cook for 1 minute.
- Pour in your milk, cream and Guinness and while continuing to whisk, bring to a low boil.
- Add in your seasonings and continue to stir.
- Remove from the heat and whisk in 3/4 of your Irish cheddar cheese.
- Whisk to combine and once all the cheese is melted, check for seasoning and flavor.
- While you are preparing the sauce, add 2 tbl butter to a skillet over medium heat and once melted, add Panko breadcrumbs. Stir to combine and lightly toast. Remove from heat when they are lightly browned.
- Combine the pasta and the cheese sauce and pour into a 9 x 9 baking pan.
- Sprinkle with the remaining cheese and buttered breadcrumbs and bake uncovered for 25 minutes.
- Remove from oven and let set for 5 minutes before serving.
