Ingredients
The following ingredients have 7 Servings
- 1 cup farro, (rinsed)
- 2 cups water
- 2 avocado, (pitted and diced)
- 1 plum tomato, (small dice)
- 1 tablespoon minced red onion
- 1 tablespoon chopped fresh cilantro
- 1 lime, (zest and juice)
- 1/2 jalepeno pepper, (seeded and minced)
- 3 tablespoons Canola oil
- 1/2 teaspoon Kosher salt
- 1/8 teaspoon black pepper
Instruction
- Add the water to a pot and bring to a boil over high heat; then stir in the farro. Allow to simmer over low-medium heat until the water has been absorbed; approximately 15 minutes. Remove the farro and add to a bowl; let cool.
- Add the avocado, tomatoes, onion, cilantro, lime zest and juice, pepper and oil to the farro. Season with salt and pepper; mix well. Keep refrigerated until ready to serve.
