Ingredients
The following ingredients have 4 Servings
- 4 potatoes, diced
- 3 ripe tomatoes
- 1/2 cup onion, chopped
- 1 clove garlic, minced
- Drops of Tabasco sauce
- Oregano and salt to taste
- 1 lb ground beef
- 5 corn tortillas
- Shredded lettuce, to taste
- Avocado slices, to taste
Instruction
- Cook the potatoes in water with salt. Set aside.
- Plunge the tomatoes in hot water for 1 1/2 to 2 minutes. Remove the skin and place in a blender. Add the onions, garlic, Tabasco, oregano and salt and blend until smooth. Transfer the sauce to a pan and simmer to thicken it, about 3 to 5 minutes. Set aside.
- Brown the meat in a pan, season with your favorite spices and add the potatoes. Stir well to combine all ingredients. Add a little bit of the tomato sauce and stir again.
- Heat the tortillas and fill with the meat and potato mixture.
- Serve the tacos with strips of lettuce, avocado slices and rest of the sauce on top.
