Ingredients

The following ingredients have 4 Servings
  • 2 lbs. boneless, skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper ((omit if you don't like spicy))
  • 1 tsp curry powder
  • 1 tsp ground cumin
  • 1/4 cup unsweetened, full fat coconut milk ((you can sub plain yogurt here if you are okay with Dairy))
  • 2 tbsp fresh lemon juice ((or the juice of 1 lemon))
  • 1/4 cup extra virgin olive oil
  • 2 tsp dijon mustard
  • 2 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh, finely chopped dill
  • 2 cloves garlic, minced
  • kosher salt, to taste
  • fresh cracked black pepper, to taste
  • 1 Head butter lettuce leaves ((aka bibb + boston lettuce))
  • 1/2 cup grape tomatoes, halved
  • 1/4 cup thinly sliced red onion ((or 1/2 of small onion))
  • 1/2 cup english cucumber, cut in half lengthwise and sliced thinly
  • 1/4 cup fresh cilantro leaves
