The following ingredients have 4 Servings
- 2 lbs. boneless, skinless chicken breasts
- 2 tbsp extra virgin olive oil
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp cayenne pepper ((omit if you don't like spicy))
- 1 tsp curry powder
- 1 tsp ground cumin
- 1/4 cup unsweetened, full fat coconut milk ((you can sub plain yogurt here if you are okay with Dairy))
- 2 tbsp fresh lemon juice ((or the juice of 1 lemon))
- 1/4 cup extra virgin olive oil
- 2 tsp dijon mustard
- 2 tbsp fresh lemon juice
- 1 tbsp apple cider vinegar
- 1 tbsp fresh, finely chopped dill
- 2 cloves garlic, minced
- kosher salt, to taste
- fresh cracked black pepper, to taste
- 1 Head butter lettuce leaves ((aka bibb + boston lettuce))
- 1/2 cup grape tomatoes, halved
- 1/4 cup thinly sliced red onion ((or 1/2 of small onion))
- 1/2 cup english cucumber, cut in half lengthwise and sliced thinly
- 1/4 cup fresh cilantro leaves
