Ingredients
The following ingredients have 8 Servings
- 2 lbs shrimp (NOT peeled)
- 1 pineapple (cut into 1 1/2" thick pieces)
- 1 purple onion (cut into 1" pieces)
- 2 lemons (sliced)
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoon Worcestershire sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 4 cloves garlic (minced)
- 1 teaspoon liquid smoke
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instruction
- Add all marinade ingredients to a medium bowl and whisk to combine.
- Place shrimp into a large mixing bowl and pour marinade over meat. Stir to combine, cover well and refrigerate overnight, stirring once or twice while marinating. Allow at least 8 hours to marinate.
- Skewer marinated shrimp along with the sliced onion and pineapple, alternating them on the skewer.
- Grill over med/high heat for about 4-8 mins or until the desired doneness rotate every 2-3 min for even grilling.
- Remove kabobs from the grill and let them rest at least 5 min before serving.
- Garnish with parsley.
