Ingredients

The following ingredients have 8 Servings
  • 2 lbs shrimp (NOT peeled)
  • 1 pineapple (cut into 1 1/2" thick pieces)
  • 1 purple onion (cut into 1" pieces)
  • 2 lemons (sliced)
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoon Worcestershire sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 4 cloves garlic (minced)
  • 1 teaspoon liquid smoke
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instruction

  • Add all marinade ingredients to a medium bowl and whisk to combine.
  • Place shrimp into a large mixing bowl and pour marinade over meat. Stir to combine, cover well and refrigerate overnight, stirring once or twice while marinating. Allow at least 8 hours to marinate.
  • Skewer marinated shrimp along with the sliced onion and pineapple, alternating them on the skewer.
  • Grill over med/high heat for about 4-8 mins or until the desired doneness rotate every 2-3 min for even grilling.
  • Remove kabobs from the grill and let them rest at least 5 min before serving.
  • Garnish with parsley.
