Ingredients
The following ingredients have 4 Servings
- 1 small pineapple
- 1 Tbs. Smoky Citrus Habanero Rub
- Vegetable oil for brushing
- Lime wedges for serving
Instruction
- Prepare a medium-hot fire in a grill.
- Using a sharp knife, trim and peel the pineapple. Cut the pineapple into quarters lengthwise and cut away the core from each piece. Cut each quarter crosswise into pieces about 1/4 inch (6 mm) thick.
- In a bowl, toss the pineapple slices with the spice rub to coat.
- Lightly brush an outdoor fry pan with vegetable oil. Place the pan on the grill, cover the grill and preheat for the pan for about 5 minutes. Working in batches if necessary, arrange the pineapple slices in the pan in a single layer. Grill, turning once, until the pineapple is lightly charred all over, 3 to 4 minutes per side. Serve with lime wedges alongside. Serves 4.
