Ingredients

The following ingredients have 4 Servings
  • 2 lb. shrimp (peeled and deveined)
  • 1/2 cup extra virgin olive oil
  • 2 cups basil leaves
  • 3 garlic cloves (minced)
  • 1/4 tsp. red pepper flakes
  • 1/4 cup pine nuts
  • Sea salt and freshly ground black pepper
  • Wood or metal skewers

Instruction

  • Preheat the grill to medium-high heat.
  • Add the olive oil, basil, garlic, red pepper flakes, and pine nuts, and season to taste in a food processor.
  • Pulse until smooth.
  • In a bowl, combine the shrimp and pesto, then toss until well coated.
  • Let sit at room temperature for 10 to 12 minutes.
  • Thread the pesto shrimp onto the skewers and place them on the preheated grill.
  • Cook for 3 to 4 minutes per side, then serve.
