Ingredients
The following ingredients have 4 Servings
- 2 lb. shrimp (peeled and deveined)
- 1/2 cup extra virgin olive oil
- 2 cups basil leaves
- 3 garlic cloves (minced)
- 1/4 tsp. red pepper flakes
- 1/4 cup pine nuts
- Sea salt and freshly ground black pepper
- Wood or metal skewers
Instruction
- Preheat the grill to medium-high heat.
- Add the olive oil, basil, garlic, red pepper flakes, and pine nuts, and season to taste in a food processor.
- Pulse until smooth.
- In a bowl, combine the shrimp and pesto, then toss until well coated.
- Let sit at room temperature for 10 to 12 minutes.
- Thread the pesto shrimp onto the skewers and place them on the preheated grill.
- Cook for 3 to 4 minutes per side, then serve.
