Ingredients

The following ingredients have 4 Servings
  • 3 Tbsp. olive oil (extra-virgin )
  • 2 Tbsp. lemon juice (fresh )
  • 2 Cloves garlic (peeled and crushed)
  • 1 Tsp. salt
  • 1/4 Tsp. black pepper
  • 1 3/4 Pounds chicken breasts (boneless skinless, cut into 1 1/2 inch pieces)
  • 1 onion (peeled and cut into 1 inch pieces)
  • 1/2 green bell pepper (seeds removed and cut into 1inch pieces)
  • 1/2 red bell pepper (seeds removed and cut into 1-inch pieces)

Instruction

  • Whisk together the olive oil, lemon juice, garlic, salt, and black pepper in a large bowl. Add the chicken and stir, making sure to coat the chicken well. Cover the bowl and refrigerate at least 2 hours, but up to 24 hours.
  • 20 minutes before you want to cook the chicken, soak 5 wooden skewers in water (to help prevent them from catching on fire). Preheat a grill to medium-high.
  • Thread the chicken, onion, and bell peppers onto the skewers, starting with a piece of chicken, and then onion, and then bell pepper, and then another piece of chicken, etc. This amount should make 5 skewers.
  • Grill the skewers until the chicken is fully cooked, about 5 to 8 minutes per side. When the chicken is fully cooked there should be no pink in the centre, and it should reach an internal temperature of 165 degrees F
