Ingredients

The following ingredients have 4 Servings
  • 1 Red onion (cut into 8 pieces)
  • 9 ozs Halloumi cheese (cut into 16 pieces)
  • 8 cherry tomatoes
  • 1 yellow Bell pepper (seeds removed and cut into 4 pieces)
  • 1 red Bell pepper (seeds removed and cut into 4 pieces)
  • 0.375 cup olive oil
  • salt
  • peppers
  • 1 clove garlic cloves (crushed)
  • 1 Tbsp chopped parsley
  • 1 tsp Caper (rinsed)

Instruction

  • Thread the vegetables and cheese onto 8 wooden skewers.
  • Place in a shallow dish, pour over 2 tablespoons of oil and season well with salt and pepper. Marinate for 1 hour.
  • Mix the remaining oil with the garlic, parsley and capers and set aside.
  • Heat the grill.
  • Place the kebabs under the grill and cook for about 4 minutes on each side, until the vegetables are soft and slightly charred.
  • Remove from the grill and drizzle a little of the parsley oil over each kebab before serving with cous cous.
