Ingredients
The following ingredients have 4 Servings
- 1 Red onion (cut into 8 pieces)
- 9 ozs Halloumi cheese (cut into 16 pieces)
- 8 cherry tomatoes
- 1 yellow Bell pepper (seeds removed and cut into 4 pieces)
- 1 red Bell pepper (seeds removed and cut into 4 pieces)
- 0.375 cup olive oil
- salt
- peppers
- 1 clove garlic cloves (crushed)
- 1 Tbsp chopped parsley
- 1 tsp Caper (rinsed)
Instruction
- Thread the vegetables and cheese onto 8 wooden skewers.
- Place in a shallow dish, pour over 2 tablespoons of oil and season well with salt and pepper. Marinate for 1 hour.
- Mix the remaining oil with the garlic, parsley and capers and set aside.
- Heat the grill.
- Place the kebabs under the grill and cook for about 4 minutes on each side, until the vegetables are soft and slightly charred.
- Remove from the grill and drizzle a little of the parsley oil over each kebab before serving with cous cous.
