Ingredients

The following ingredients have 6 Servings
  • 3 small or medium zucchini
  • 1 tbsp butter (melted)
  • ¼ tsp curry
  • ½ tsp garlic powder
  • ½ tsp lemon pepper
  • ¼ tsp basil
  • ½ tbsp parmesan cheese
  • 2 tsp lemon juice

Instruction

  • Prep: Begin by washing and then slicing the zucchini lengthwise in half, then slice diagonal slits in the flesh of the zucchini.
  • In a small bowl, melt the butter in the microwave for about 30-45 seconds. Next, add the curry, garlic powder, lemon pepper, basil, parmesan cheese and lemon juice and stir well to combine.
  • Grill: Get the BBQ heated to medium heat, when ready, put zucchini on the grill and brush part of the sauce on the cut flesh of the squash.
  • Once it has cooked for 3-4 minutes, flip over the zucchini and brush the bottoms of the zucchini with the butter seasoned sauce. Flip the zucchini back over, brush with remaining sauce and cook for another 3-4 minutes. Be aware that cooking times will depend on the size of your zucchini, but anticipate grilling for about 8-10minutes on a medium-heat grill. Serve immediately and enjoy!
