Ingredients
The following ingredients have 4 Servings
- 8 (~2 lbs) chicken thighs, boneless & skinless
- 2/3 cup onions, diced
- 2 tsp garlic, minced
- 2 tsp ginger, zested
- 1 Tbsp Jalapeno, minced
- 1/2 tsp ground all spice
- 1/2 tsp ground black pepper
- 3 Tbsp brown sugar
- 1 tsp ground paprika
- 1 1/2 tsp dried thyme leaves
- 2 Tbsp water
- 3 1/2 Tbsp fresh lime juice
- 2 Tbsp soy sauce / tamari - regular or gluten free
- 1/2 tsp salt
Instruction
- Bring a grill to medium heat (~400F).
- Make Marinade. Add all ingredients to a food processor and whiz it up. Marinate chicken for at least 30 minutes and up to 24 hours.
- Grill covered for ~ 6-7 minutes per side or until internal temperature of chicken reaches 165F and juices run clear. Baste reserved marinade over chicken a couple times but stop 5-8 minutes before taking off the grill.
