  • 1 large red onion
  • Mild vegetable oil
  • Kosher or sea salt and freshly ground black pepper
  • 1 cup plain whole-milk yogurt
  • 1 clove garlic, grated or finely minced
  • 1 tablespoon finely chopped fresh cilantro or 1 1 ⁄ 2 teaspoons finely chopped fresh mint or a combination
