The following ingredients have 4 Servings
- 1 Peache
- 1 Nectarine
- 2-3 Apricots
- 1 small Watermelon
- 1 small Honeydew Melon
- 1 Pineapple
- Extra Virgin Olive Oil
- Fresh Mint or Basil (optional)
- Coconut sugar (optional)
- Ice Cream (optional)
- Wooden skewers
Instruction
- First, wash your fruit if needed. Then cut up into pieces, about 1-2″ or so, then thread onto wooden skewers.
- Drizzle extra virgin olive oil onto the fruit, or brush on, whichever is easiest for you. Sprinkle with a little coconut sugar if using.
- The next step is to grill on a preheated grill for about 4-5 minutes per side, rotating as needed until the fruit softens and develops grill/char marks.
- Remove kabobs to a serving platter.
- Chop up mint or basil finely and sprinkle over the fruit. Then, using the tines of a fork, gently push the fruit off of the skewers into bowls, dividing them up as needed. Add a scoop of your favorite ice cream if desired, serve immediatley.
