Ingredients

The following ingredients have 4 Servings
  • 1 Peache
  • 1 Nectarine
  • 2-3 Apricots
  • 1 small Watermelon
  • 1 small Honeydew Melon
  • 1 Pineapple
  • Extra Virgin Olive Oil
  • Fresh Mint or Basil (optional)
  • Coconut sugar (optional)
  • Ice Cream (optional)
  • Wooden skewers

Instruction

  • First, wash your fruit if needed. Then cut up into pieces, about 1-2″ or so, then thread onto wooden skewers.
  • Drizzle extra virgin olive oil onto the fruit, or brush on, whichever is easiest for you. Sprinkle with a little coconut sugar if using.
  • The next step is to grill on a preheated grill for about 4-5 minutes per side, rotating as needed until the fruit softens and develops grill/char marks.
  • Remove kabobs to a serving platter.
  • Chop up mint or basil finely and sprinkle over the fruit. Then, using the tines of a fork, gently push the fruit off of the skewers into bowls, dividing them up as needed. Add a scoop of your favorite ice cream if desired, serve immediatley.
