The following ingredients have 7 Servings
- 1 cup cherry tomatoes (halved or quartered depending on size)
- 1 cup cooked corn (fresh or frozen)
- 1 large green onion (chopped (white and green parts))
- 1 small jalapeno (seeded and chopped fine)
- 1/4 cup chopped fresh cilantro
- 1 lime (juiced)
- salt and pepper (to taste)
- 1.5 lbs. wild cod (or other flaky white fish)
- 1 tablespoon avocado oil (or other oil with a high smoke point)
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt (or to taste)
- 1/4 teaspoon freshly ground black pepper (or to taste)
- 1 cup finely shredded cabbage
- 1 lime
- 6 6" corn tortillas (or sub with your favorite)
- 1 large avocado (sliced)
