The following ingredients have 4 Servings
  • 3 lbs boneless, skinless chicken (we used thighs)
  • 1 cup chicken broth
  • 1/3 cup soy sauce
  • 3 tablespoon sugar substitute
  • 3 cloves minced garlic
  • 1 teaspoon liquid smoke
  • salt to taste
  • 1 zest of a lime ((optional) )
  • 4 limes (juiced)
  • 1/4 teaspoon powdered ginger
  • 1 cup mayo
  • 1 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chicken broth
  • cajun seasoning (to taste (1-3 teaspoon))
  • 1 teaspoon cumin
  • 1 teaspoon dried parsley
  • hot sauce (to taste (1+ teaspoon))
  • 1 cup shredded cheese of choice
  • Garnish- Limes (cut into wedges)
