Ingredients
The following ingredients have 4 Servings
- 125 g Crunchy Peanut Butter
- 1 tbsp Soy Sauce
- 1 tbsp Chilli Paste
- 1 tbsp Lime Juice
- 1 tbsp Sugar
- 60 ml Warm Water
- 1/2 Cucumber
- Salt
- 1 clove Garlic (crushed)
- 1/2 tsp Rice Vinegar
- 1/2 tsp Sesame Oil
- Sesame Seeds (to garnish)
- 300 g Skinless Boneless Chicken Thighs ((4 thighs))
- 1 tbsp Soy Sauce
- 1 tbsp Honey
- 1 fat clove Garlic (crushed)
Instruction
- To make the sauce whisk together all the ingredients and set aside until ready to use.
- To make the cucumber hit the cucumber a few times with a rolling pin. Slice the cucumber and place in a colander with a sprinkling of salt. Put the colander over a bowl and leave for 10 minutes. Place the cucumber in a bowl and mix with the sesame oil, rice vinegar and garlic. Garnish with the sesame seeds.
- To make the chicken coat the chicken thighs with the soy sauce, honey and garlic in a bowl then cook on a grill or barbecue for about 5 minutes each side until cooked through. Serve with the sauce, cucumber and your grain of choice.
