Ingredients

The following ingredients have 4 Servings
  • 4 chicken breasts
  • 1 bottle lemon marinade
  • 1 cup chopped California Black Ripe Olives
  • 2 cups chopped tomatoes
  • 1/2 cup chopped red onion
  • 1 cup crumbled feta cheese
  • 1 clove garlic (minced)
  • 2 tablespoons fresh basil
  • 1 tablespoon fresh oregano
  • Salt and Pepper (to taste)
  • 3 tablespoons red wine vinegar
  • 2 tablespoons olive oil

Instruction

  • Marinate chicken breasts in lemon marinade for one hour.
  • To make Mediterranean Salsa, combine chopped California Black Ripe Olives, chopped tomatoes, crumbled feta cheese, onion and garlic in a medium bowl. Add fresh herbs and salt and pepper to taste.
  • Drizzle red wine vinegar and olive oil over salsa and gently toss.
  • Grill chicken over medium heat.
  • When chicken is done, plate and top each piece of chicken with a generous portion of Mediterranean Salsa.
