Ingredients

The following ingredients have 4 Servings
  • 4 thin cut chicken breasts
  • 1 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • kosher salt, pepper to taste
  • 1 cup guacamole (store bought or homemade, see recipe in post above for Smoked Poblano Guacamole)
  • 8 slices bacon (cooked and crumbled)
  • Optional: cotija cheese crumbles

Instruction

  • Brush the chicken on both sides with olive oil. Sprinkle evenly with paprika, chili powder, garlic powder, cumin, kosher salt, and pepper.
  • Grill over medium to medium high heat for 3-4 minutes per side.
  • Top each chicken breast with 1/4 cup guacamole, cooked bacon bits, and cotija cheese if using.
