Ingredients
The following ingredients have 4 Servings
- 4 thin cut chicken breasts
- 1 Tbsp olive oil
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- kosher salt, pepper to taste
- 1 cup guacamole (store bought or homemade, see recipe in post above for Smoked Poblano Guacamole)
- 8 slices bacon (cooked and crumbled)
- Optional: cotija cheese crumbles
Instruction
- Brush the chicken on both sides with olive oil. Sprinkle evenly with paprika, chili powder, garlic powder, cumin, kosher salt, and pepper.
- Grill over medium to medium high heat for 3-4 minutes per side.
- Top each chicken breast with 1/4 cup guacamole, cooked bacon bits, and cotija cheese if using.
