Ingredients

The following ingredients have 4 Servings
  • 4 large boneless, skinless chicken thighs
  • ¼ cup brined capers or green olives, drained and finely chopped
  • 4 Tbsp olive oil, divided
  • 1 tsp Dijon mustard
  • ¼ tsp salt plus more to taste
  • ¼ tsp pepper plus more to taste
  • 1½ pints cherry tomatoes
  • 2 halved lemons
  • Fettuccine, cooked

Instruction

  • Preheat a gas grill or grill pan to medium-high. In a dish, toss chicken thighs with capers or olives, 2 Tbsp olive oil, Dijon mustard, ¼ tsp salt and ¼ tsp pepper. In a bowl, toss cherry tomatoes and lemons with remaining 2 Tbsp olive oil. Season tomatoes with salt and pepper to taste. Grill chicken, turning halfway through, until charred in parts and just cooked through, 15 to 20 minutes. Grill tomatoes and lemon halves (cut side down) until charred, 3 to 5 minutes. Serve chicken and tomatoes over fettuccine, if you like. Squeeze charred lemon halves over the top.
