  • 4 boneless (skinless chicken breasts)
  • 4 slices mozzarella cheese (or ½ cup shredded mozzarella)
  • 2 Roma tomatoes (diced (or ½ pint cherry tomatoes))
  • ½ Tbsp olive oil
  • 1 tsp minced garlic
  • ½ tsp kosher salt
  • 1 Tbsp freshly chopped basil leaves
