The following ingredients have 8 Servings
- 1 cup (150g) quinoa (washed and drained)
- 4 green onions (sliced)
- ½ small cucumber (deseeded and chopped)
- 4 tomatoes (finely chopped)
- ¼ cup (50g) cooked sweetcorn kernels
- 1 handful chopped parsley
- 1 handful chopped coriander
- Juice of 1 lemon
- 1-2 tablespoons olive oil
- 12 large avocados
- 1 lime (juiced)
- 1 tablespoon olive oil
- lime wedges (fo garnish)
